Goat’s cheese in filo with smoked duck and salad…
Actually, this is so easy you don’t have to go to a restaurant in the wilds of the French countryside to enjoy it – Cut a square of filo and plonk your soft goat’s cheese inside – draw up the pastry and brush with melted butter – then flash in hot oven for a few mins – just keep an eye on it and remember to sniff.
When you make your dressing add only Dijon mustard (the best) to your good quality olive oil and lemon juice – season well et voila!
No need to add the strips of duck breast unless you really want to – it will taste great just the same.
We’re eating chilli from the freezer tonight – but beans on toast is one of the cosiest meals I know – so take that tin out with pride if you’re feeling lazy.

This is one of the great lakes – man-made, into which the Seine drains – - and if the Seine needs water, they send it back again – Smart idea, huh? Plus it’s a haven for all sorts of birds – Never know what I’m going to find next when I go adventuring-
